Menu Plan Monday!!

WOO HOO! My 1st Menu Plan Monday....Im so excited!!! I love reading the blog "I'm and Organized Junkie" and she does MPM every Monday. Since hubby doesn't get paid until Wednesday and we dont have a ton of food right now because we haven't been shopping for a month, the first couple of days are gonna look pretty bad =/ But after Wednesday we'll have some food in the house and I'll be able to cook again =) These are also just dinners for me and the 2 girls (3 years old and 18 months) since hubby is deployed right now.

So here we go....

Monday: Ham Steak, Lima Beans, Stovetop Stuffing, and Cornbread Muffins

Tuesday:Baked Chicken with Herbs, Cooked baby Carrots, and Mashed Potatoes

Wednesday: Shepard's Pie

Thursday: Left Overs

Friday: Chicken Enchiladas and Mexican Rice

Saturday: Stovetop One-Dish Chicken Bake

Sunday: Left Overs

We're sort of in the same place with the budget, the first part of the menu is boring then it gets better near payday :) The Shepherd's Pie looks yummy!

Catharine, welcome to MPM! You'll find lots of great ideas here. I'm going to try the Stovetop Chicken Bake. I love that stuffing. :) I see you're stationed in Naples. Are you picking up any local recipes?

Your menu looks tasty. Our menus always get rather interesting at the end of the month when it's like "Uh, lets see what's in the pantry and going dead in the veggie drawer in the fridge!"

catharine, your menu looks great! The end of the month is sometimes tough, especially if you don't have much in the pantry. My new budget day is this wednesday too, so I had to look in the freezer and fridge for some inspiration for monday and tuesday lol. And much respect to you as an Army wife....i'm in the air force and I know how much spouses are important to us, especially when we are deployed. Kudos to you!
